Salads are my meal of choice lately. There is no thinking involved and they are easy to pull together if you have lots of fresh ingredients on hand. Today I threw in mixed greens, avocado, cauliflower, peppers and pumpkin seeds. I like to top them with something warm so it feels more like a meal. This time it was sautéed zucchini and tofu.
